#3 Bakers basics: Bagels!

Looking for a simple no machine required bagel recipe? I have found the perfect one for you!
Ingredients:
250g bread flour (may need more for dusting)
1/2 Tablespoon brown sugar
1 teaspoon salt
1 1/2 teaspoon instead yeast
160ml warm water
1 egg (egg wash)
25g sugar
1 litre boiling water
Steps:
Prepare your yeast. Add warm water to yeast and leave aside for 5 minutes.
In a large bowl, add bread flour, brown sugar and salt and whisk until combined.
Once the yeast mixture has rested, add to flour mixture in 3 intervals, mixing in between.
Remove dough from bowl and knead on a floured surface for 4-5 minutes until a ball forms
Let dough rest in an oiled bowl for 60 minutes or until it has doubled in size
Preheat oven to 220 degrees Celcius
After the dough has doubled in size, divide it equally into 8 portions
Take your time to shape the dough balls into bagels.
Let the bagels rest while you prepare your boiling water sugar mixture
Prepare a pot with sugar and boiling water (Ensure that water is BOILING)
Add your bagels one at a time and let it boil for around 20-30 seconds on each side. (longer if you want it chewier)
Do this for all your bagels.
Brush egg on your bagels and add any toppings you would like. I used oats, pumpkin seeds and sesame seeds.
Bake it in preheated oven for 15-20minutes or until bagels are golden brown on the top.
