#2 Bakers Basics Red velvet cheesecake brownies

Sounds intimidating? It may actually be simpler than you think! No mixer, no mess! Just bowls, a whisk and spatula to combine it all together!

Ingredients:

  1. 115 butter

  2. 140g sugar

  3. 25g cocoa powder

  4. 100g flour

  5. 1/4 tsp vanilla

  6. 2 eggs

  7. 1/4 tsp red food colouring gel

  8. 200g cream cheese

  9. 1 egg

  10. 40g sugar

  11. 225g cream cheese

Steps:

  1. Preheat the oven to 175 degrees

  2. Prepare a 9x9 inch pan by lining it with parchment paper

  3. Leave the cream cheese out at room temperature to soften

  4. Melt butter in a microwave or in a saucepan over the stove and leave it aside at room temperature

  5. In a large bowl, add cream cheese and use a whisk to soften it by mixing

  6. Add sugar and egg to the cream cheese and mix until completely smooth. Leave it aside.

  7. For the red velvet brownie batter, add sugar, vanilla, cocoa powder to the melted butter and mix it up.

  8. Add eggs and red food colouring to the mixture and mix until combined and smooth.

  9. Add flour to the wet mixture and fold the batter slowly until all the flour is folded in. Don't over mix!

  10. Add 80 percent of the red velvet batter to the tin and use a spatula to even it out.

  11. Use a spoon/ ice cream scoop to put dollops of the cream cheese mixture all over the batter

  12. Add remaining brownie batter to the top of the cream cheese in the tin.

  13. Using a spatula or skewer, run it through the batter to form the swirls. Do this until you get a beautiful marble effect.

  14. bake it in the oven for 25-30 minutes or until a skewer is inserted to the centre of the brownie and comes out clean.

Ye, we may all still be stuck at home in quarantine. But that doesn't mean that you can't try new things and explore! I certainly hope that you will try this out.
