BANANA + Chocolate!!!! Who doesn't love this combination? Delicious ripe bananas with decadent chocolate chips that melt in your mouth and it is all folded in a moist and delicious muffin!
Banana chocolate chip muffins are the ultimate breakfast comfort food that you could ask for. It is so soft, moist and deliciously flavoured with over ripened bananas. At the same time, these are extremely simple to make. You can simply make this in one bowl with no fancy equipment. It is sooo simple and easy to handle:))
Here is my delicious banana Muffin recipe I created from scratch. Enjoy!!!

BANANA CHOCOLATE CHIP MUFFINS
Ingredients:
3 over ripened bananas
2 eggs
100ml Vegetable oil
100g Sugar
1 tsp Baking powder
200g Flour
90g Chocolate chips
1/8 tsp cinnamon
Steps:
Preheat Oven to 200 degrees celsius
Prepare muffin tin with cupcake liners
Mash 3 over ripe bananas in a large bowl with a fork
Add sugar, eggs, vanilla extract, vegetable oil to the bananas and use a spoon to mix it altogether until fully incorporated.
Once all the wet ingredients are mixed, add the flour, baking powder and chocolate chips. Gently use your spoon/spatula if you have one, to fold the mixture. At this point, you want to ensure that you DON'T OVER MIX the batter. Once the flour cannot be seen, STOP mixing. Over mixing batter will cause the muffins to be chewy and tough.
Use your spoon (I like to use a medium sized ice cream scoop) to equally divide the batter into the 12 muffin liners.
Let it bake in the oven (middle rack) for 18-20 minutes or until a toothpick is inserted and comes out clean without any wet batter.
